SPICY GINGER CHRISTMAS COOKIES
Spicy traditional German Christmas cookies ( Pfeffernüsse) , but they look so sweet :). Crispy on the outside, soft on the inside, with an amazing aroma of ginger, anise and pepper. However, immediately after baking - quite hard, soften after a week. Do not reduce the amount of fresh pepper in particular - is the hallmark ... The recipe comes from a German blog.
Ingredients for about 48 pieces:
- 80 g butter
- 100 g molasses
- 100 g of sugar
- half a teaspoon of ground ginger
- half a teaspoon of freshly ground anise
- a little less than half a teaspoon of freshly ground black pepper
- 250 g of wheat flour
- pinch of baking soda
For frosting:
- 80 g icing sugar
- about 1 tbsp lemon juice
For a small pot add butter, molasses, sugar and spices, bring to a boil, then download it from the burner. Add flour and baking soda, mix quickly. Cool down cake. Wrap in cling film and put in the fridge overnight.
The next day the dough tear pieces of matter and form small balls. Arrange on a baking tray greased with butter. Before baking, chill in the refrigerator for an hour.
Bake cookies on the bottom shelf of the oven for 12 - 15 minutes at 180 º C (baked 12 minutes will be softer). Allow to cool on a wire rack. Decorate with icing made from powdered sugar crushed with lemon juice.
Cookies can be stored in a cool dry place for four weeks.
